Instant ramen is one of those quick meals I’ve tried several times. While it’s not the healthiest option, it’s definitely very popular. Its popularity doesn’t just lie in convenience but also in the cultural significance it holds, especially in countries like South Korea and Japan.

In recent years, the rise of K-dramas and the Hallyu wave (the spread of Korean pop culture) has played a key role in bringing instant ramen to the global stage. In these Korean series, it’s common to see characters eating ramen in everyday moments, like during breaks, when stressed, or when sharing a meal with friends. These scenes don’t just showcase part of Korea’s food culture, but they’ve also turned instant ramen into a symbol of connection and comfort for K-drama fans worldwide. This has sparked a boom among fans who want to recreate those moments at home with a bowl of ramen.

But ramen has deeper roots in Japan, where it began as a popular food before becoming a global phenomenon. While the instant ramen we buy in packages isn’t quite the same as traditional Japanese ramen, it’s still a nod to that culinary heritage. Japanese instant ramen versions often focus on more complex broths, whether it’s miso, soy, or tonkotsu (pork). For some time now, I’ve been trying different brands, which offer a range of noodle types and flavors. I love exploring the variety available in the market.

Also, the broth is one of the most important features of ramen. Korean broths tend to be spicier, often enriched with deep flavors and spices. In contrast, Japanese broths can range from light and aromatic to rich and creamy. Personally, the creamy broth is my favorite because it has a smooth texture and a comforting flavor that enhances the ramen experience.

Some Ramen Brands I’ve Tried:
1. Samyang Ramen

2. Samyang Buldak Bokkeummyun (Black Buldak)

If you consume TikTok, you’ve probably seen the popularity of Samyang Buldak Bokkeummyun (Black Buldak), which stands out for its intensity and rich flavor, earning a cult following. This ramen isn’t just about the heat; it offers a bold and addictive taste that keeps you coming back for more.
Among its most surprising ingredients are seaweed and spicy seasonings, adding an explosion of flavor. The noodles are udon-style, thick and chewy, allowing them to soak up the sauce remarkably well, resulting in a burst of heat and flavor with every bite. If you enjoy spicy food, get ready!
3. Chencun Rice Noodle Chicken and Mushrooms

Although less known than other brands, Chencun’s rice noodles are a delicious and lighter option. The chicken and mushroom flavor is mild but satisfying. I enjoy the texture of the rice noodles, which are perfect for absorbing the broth. This option is ideal when I’m looking for something comforting but not too heavy.
4. Assi Kimchi Rapokki

Assi’s Kimchi Rapokki noodles are very popular among kimchi lovers and tteokbokki (Korean rice cakes) fans. The distinct kimchi flavor, combined with the chewy texture of the rice cakes and the softness of the noodles, makes this a perfect option when I want something more filling.
5. Assi Vietnamese Rice Noodle Soup

Assi’s Vietnamese rice noodle soup is another delicious option. I love the fresh, light flavor—perfect for a quick meal. The texture of the noodles is smooth, and the broth has an aromatic touch that always leaves me satisfied.
6. JML Stew Pork

JML’s stew pork noodles are highly appreciated for their deep flavor. To enjoy it to the fullest, I like adding a fried egg and a drizzle of chili oil. It’s a great choice for cold days when I want something flavorful.
7. JML Spicy Beef

This one is quite popular for its mix of spiciness and beefy flavor. JML’s Spicy Beef noodles are an excellent choice for those who love spicy food. To elevate the experience, I like making it creamy by adding a bit of cream. The texture of the noodles is great, making every bite satisfying.
8. Neoguri

Neoguri is known worldwide for its unique mix of thick noodles and spicy broth. I really enjoy its thicker texture, which adds a different dimension to the ramen experience. The seafood flavor in the broth is delicious and takes me to the coast with every bite.
9. Nongshim Shin Ramyun

One of the most popular ramens globally, Nongshim’s Shin Ramyun stands out for its rich and spicy broth. The noodles have a chewy, satisfying texture. I love how the broth’s flavor blends with the noodles, creating a comforting experience that’s perfect for any occasion.
10. Mai Lao Da Lobster

Mai Lao Da Lobster noodles are an interesting and tasty option. The combination of seafood flavors and the richness of the lobster broth makes this ramen a delicious experience. The noodle texture is excellent, and the seafood taste is perfect for seafood lovers looking for something different.
Original Popular Toppings

Popular original toppings: nori, menma, negi, chashu, marinated egg (ajitsuke tamago), shiitake, corn, green onion, bamboo shoots, tofu, and naruto (fish cake with a spiral design).
After trying these brands, I usually customize my ramen with various ingredients. To give it a fresh touch, I like adding:

• Vegetables: Spinach, green onions, sliced carrots, turnips, or Chinese cabbage (choi) are some of my favorite options.

• Proteins: Breaded chicken, battered shrimp, soft-boiled egg or fried tofu are great for adding more texture and flavor to every bite.

• Sauces: Sauces are key to enhancing the flavor. Some of my go-to choices are:
• Soy sauce
• Chili sauce
• Sesame oil
• Sweet soy sauce
• Sriracha sauce
• Miso sauce
•Peanut sauce
Sauces like chili oil, sesame sauce, and crushed peanuts can give your ramen a special twist. Peanuts add a crunchy texture and a rich nutty flavor that complements the ramen’s taste perfectly. Sesame oil adds an aromatic note, while garlic enhances the savory depth of the broth.
I invite you to experiment with these ingredients and create your perfect version of ramen, turning each bowl into a delicious culinary adventure.
